The Thief of Legend epic destiny allows you to steal something "intangible" from a defeated enemy. What are some fun ideas?  Here are some I've come up with:

The love of his wife
The love of his children
His honor
His fame
His beauty
His youth
The loyalty of his men
His title
His joy/happiness
His obscurity/anonymity
His memories/knowledge
His soul
Her heart/love
His destiny
His name

What are some others that might be useful to my character or just to rub defeat into the vanquished?

Steal their hope, their confidence, their sanity.
Steal the spring in their step.
Steal their potential.

Steal their most painful memory

Steal their sight, or balance, or fashion-sense.

His morale or courage.
His influence, reputation, standing, or social capital.
His sympathy, empathy, or compassion.
His satisfaction, comfort, or self-worth.

How do you stop a bad guy cold?

Steal his motivation.

Or maybe alignment.

Steal his motivation.

Or maybe alignment.

Considering you have to reduce the bad guy to 0 hp before you can use the steal effect, it's pretty good to change the way things are handled in a city state or organization.

Steal cruelty, ambition, corruption?

Your identity - the thief has engineered events so that all the world believes that he is you, and that you are nobody.  He's taken your notoriety for himself, and nothing you do convinces anyone that he is an imposter.

The love of your life - the thief has shown him who you really are, and he will hate you forever for lying to him all those years.  What's worse, she's seduced him for herself.  He is her creature now, heart and soul.

Your command - the thief has shamed you before your own horde.  They follow him now, and on his command they will not deign even to slay you.

Your youth and beauty - her poison has left you barren, withered and frail.  Your hair is straw, your face sunken and your body bent.  She glides across the floor with the grace that used to be yours, damn her.

Your confidence - all of your schemes have come to ruin tonight.  Your allies have been turned against you or made to disappear.  How could you not have seen this coming?  You'll be casting backward glances for the rest of your life, second guessing yourself, waiting for it all to come crashing down around you again.

Your mortality - You've been dethroned, disempowered, and imprisoned, and just when you thought there was nothing left to take, the bastard found a way to make sure your bondage would not even be relieved in death.  You are immortal now, and your sentence will be served eternally.  Even at the end of this world, your disembodied consciousness will drift through the void, aimless, powerless and hopeless.

It's debatable. The ED gives eye color as an example, which is pretty tangible. It doesn't say non-mechanical features, which would make the issue completely clear.

The feature says "when you reduce a creature to 0 hit points or fewer...."

So, unless you are thinking those dead people will need the memories of their deity, I think just killing them will satisfy your deity's needs.

Someone previously said "1 year of his life", well, you just killed him, so you took much more than that!

#1:  Death is not a career-ending injury in D&D.  There's afterlives, and there's resurrection.
#2:  You could have left him alive when you reduced him to 0.
#3:  The point of stealing something is not just so that the other guy doesn't have it any more, it's also so that you *do* have it.  So taking a year from everyone you kill?  Sounds like a murderous eternal youth to me.

Question - can you steal more than one thing from a person if you kill them outright?

That's not what the power says happens, so it's not what happens.

Also, you could knock them unconscious at 0 HP, right?  Knock them unconscious.  You could have stolen all of their hope, or even their destiny.  That might be way more effective than killing them.

Yes.  And yes, it could be.

Defeat a lich and steal the knowledge of the location of his/her phylactory.

Defeat an aquatic creature and steal their aquatic-ness.  (Granted, the feature says you steal something, not that you can use it ... it leaves that part up to the DM....)

Defeat a Bugbear and steal their ability to use oversized weapons.

Defeat a creature with an aura and steal the aura.

Defeat a Dragon and steal its breath weapon... possibly?

Yeah, I guess I didn't specify which year ;)
